Edisto Restaurant

I’m not sure if any of yall have heard of the Edisto Motel or eaten there. If so, you are one of the lucky ones. If not, a small part of you is missing – although you don’t know it. At least one a year we would take a small detour on our way to Fripp Island to eat at their small restaurant in Jacksonboro, SC. We typically waited an hour or more to be seated, but it was well worth it. There was never any question about what to order – it was fried shrimp and hushpuppies. Sadly, the restaurant closed in 1998 after 51 years. Fortunately, I stumbled upon their recipe for fried shrimp. John Martin Taylor, better known as Hoppin’ John, included the recipe in his The Fearless Frying Cookbook (http://www.hoppinjohns.com/cgi-bin/screenbld.asp?Request=friedshrimp&CN=2005082101). I plan to try it tonight. I’m sure it will bring back memories but I know it will pale in comparison to the real thing.
